1 c....Paula Deen's Chicken Spaghetti<br />2 T butter<br />1 c. chopped onion<br />1 c. chopped celery<br />14 oz. chicken broth<br />1 can cream of mushroom soup<br />1 can cream of chicken soup<br />10 oz. Rotel <br />4.25 oz. can of diced olives (I omitted these)<br />4 oz. jar of sliced mushrooms (I omitted these too!)<br />1/2 c. sour cream<br />1 t. salt<br />3.5 c. chopped cooked chicken<br />2 c. shredded cheddar cheese<br />16 oz. box of angel hair pasta<br />3/4 c. Panko crumbs<br />1 T. butter<br /><br />Spray a 13x9 baking dish with non-stick cooking spray. <br />Melt butter - add onion & celery. cook until tender.<br />In bowl, combine onion mixture with remaining ingredients (saving Panko crumbs). Spoon mixture into baking dish.<br />In another bowl, combine bread crumbs with melted butter and sprinkle over spaghetti.<br />Bake @ 350 for 30 - 40 minutes.<br /><br />I made this when we were having company and I served half the recipe and froze the other half. I know its wonderful fresh, so I'm assuming you could freeze it and it would be good later, too :)<br /><br />Mom’s Meatloaf<br /><br />*She said she didn’t have exact measurements, so these are to the best of her estimation ☺<br /><br />1 lb. ground beef<br />1 egg<br />¼ cup oatmeal (instant is fine)<br />¼ cup onions<br />¼ cup green pepper<br />1/3 cup cheese<br />a squirt or 2 of BBQ sauce<br />¼ (or more ☺) cup brown sugar<br /><br />Mush ingredients together very well. “When you think you’ve mushed enough, mush some more ☺”<br /><br />Pat into baking dish until it’s about 1 ½ in. thick, and not touching the sides of the dish.<br /><br />Pour1/4 in. of water onto the sides of the meat.<br /><br />Drizzle ketchup all over the top of the meat so that you can't see the top.<br /><br />Cook at 350 for 1 hour. “It will always be done after an hour.”<br /><br />*I don't even like meatloaf, and I like this!!! Crock Pot Chic...Ok, this one you guys should love!<br /><br />Crock Pot Chicken and Sausage Gumbo<br />1/3 cup all-purpose flour<br />1/3 cup oil<br />3 cups water<br />12 ounces cooked sausage links, sliced<br />1/2 cups diced cooked chicken (from my weekly roast chicken)<br />2 cups sliced okra or 10-ounce package frozen okra<br />1 cup onion, diced (about 1 large)<br />1/2 cup green pepper, diced<br />1/2 cup celery, diced<br />4 cloves garlic, minced<br />1/2 tsp. salt<br />1/2 tsp. ground black pepper<br />1/4 tsp. ground red pepper<br />3 cups hot cooked rice <br /><br />To make the roux, stir together oil and flour in a medium saucepan until smooth. Cook over medium-high heat for about 5 minutes, stirring constantly until it’s a dark, reddish-brown color. Cool.<br />Place water in a Crock Pot and add roux; stir. Add sausage, chicken, okra, onion, pepper, celery, garlic, salt, black pepper, and red pepper. Cover and cook on low heat for 6-7 hours, or on high heat for 3 hours. Skim off the fat, and serve over rice.<br /><br />*The great things about it are that you can put it in the crock pot in the morning, and when you come home, your house will smell heavenly!!!
